Sourwood Mountain — Zoologist Bee Impression

Sourwood honey, still warm, poured over something soft and floral. The opening is ginger syrup and royal jelly — sweet but not sticky, with a little heat behind it. Broom, mimosa and orange flower keep the middle from turning into dessert, and the base goes quiet and golden: benzoin, labdanum, sandalwood, tonka, vanilla. It smells like a good honey house in late summer.

Sourwood Mountain sits in Jefferson County, and sourwood is the honey these mountains are known for — the one beekeepers chase up the ridges when the trees bloom in July. There is a fiddle tune by the same name. Both seemed right for a fragrance built around a beehive.
