MOLASSES
Sorghum cooked down in an open pan until it darkens.
Sorghum cooked down in an open pan until it goes black and bitter at the edges. The opening is bergamot and pink pepper over a thread of incense — brighter and drier than the name suggests, and it does not last long. What follows is the reason for the fragrance: rum and vanilla absolute, boozy and dark and unrepentant, with ylang-ylang adding a faint banana-flower richness underneath. Benzoin, tonka, cedar, and sandalwood settle the base into something resinous and smoky, so the sweetness always has wood behind it.
We chose Molasses because Spiritueuse Double Vanille is vanilla with liquor and smoke in it, and that is what sorghum smells like at the end of a long boil: sweet, with something burnt underneath. The rum and incense keep it from ever turning into dessert. At extrait strength the vanilla gains weight and the resinous base carries noticeably longer.
